The count for the purchased products are based on the number of line items per order and does not use the actual quantity count in each line item.
I think this is a bug since the quantity should be used as basis for the purchased products count.

We have tested it at our end and found no issue as you can see here (https://www.loom.com/share/b146133628e8477f9225ab565af43125)

According to the present flow, when you place an order the report will not show the purchase item. Once the order is marked complete / processing then under the purchase item count of purchase product will show.

Kindly check the same at your end and let us know.

Thank you for the response.
The video you provided shows 2 orders (one with 2 different items and one with only 1 item).
It is working fine since the order with 2 items have actually different item types thus creating 2 line items.
Can you try doing an order for 2 items of the same type (for example, 2 chairs) and confirm if it is working on your end?
