I want to delete all of the preset storefront policies for vendors and add a custom policy option section called “Ordering Policy”

The default flow is such that in the Policies tab you’ll be able to add policy for shipping, refund, and cancellation/return or exchange policy. However you can disable the policy from admin end via WCMp>Settings>General>Enable Policy .(see screenshot- https://prnt.sc/9_rl5DIWH4eN )
But now if you want to change the default flow you’ll need to do custom code on your end. Now in order to assist you with the coding flow, kindly explain the full flow you are looking for, so we can assist you accordingly.
